These raspberry bars are very close to the ones we used to sell in the shops. Feeling nostalgic? Whip up a batch!

1 package IG Bakery Vanilla Muffin Mix

2/3 cup oats

1 egg

1/2 cup oil

8 oz raspberry jam

2 cup fresh or thawed frozen raspberries

Preheat the oven to 325 degrees.

Combine muffin mix, oil, 1/3 c oats, egg.

Reserve 3/4 cup, press the rest in bottom of 9x13 pan. 

Bake for 10 minutes.

In a small bowl, mix jam and thawed raspberries.

Combine reserved crumb mix with rest of oats and sprinkle on top of raspberry mix.

Bake 18-25 min more. Cool on a rack.
