There's just something about the classic combination of lemon and poppyseed. Use our vanilla muffin mix to make them gluten free and easy as, well... muffins. 

1 pkg vanilla muffin mix

4 eggs

1 cup sour cream

1/2 cup oil

1 Tbsp lemon zest

2 tsp poppy seeds

Mix all ingredients well.

Portion into cupcake tins with liners. 

Bake at 350 for 12-17 min until a toothpick inserted into the center comes out clean.
