Gluten Free Frosted Cinnamon Coffee Cake
1 package IG Bakery Vanilla Muffin Mix
8 oz sour cream
3/4 cup oil
1 cup brown sugar
1 Tbsp cinnamon
4 Tbsp milk
1 Tbsp vanilla extract
2 C sifted powdered sugar
Mix first 4 ingredients with a mixer until smooth.
Pour half into a greased 13x9 pan.
Mix cinnamon and brown sugar in a separate bowl.
Spread evenly over first half of the batter
Pour the rest of the batter over the cinnamon-sugar and spread as evenly as possible.
Swirl using a spatula
Bake at 350 for 20-25 minutes, until toothpick comes out clean when inserted.
While the cake is baking, mix milk, vanilla and powdered sugar in a bowl with a whisk until smooth.
When cake comes out of the oven, pour the powdered sugar icing all over the top of the warm cake and spread evenly.
Cool for 10 minutes before eating.
